Good evening hellions, headbangers, and craft brew lovers!  The Meista here getting aggressive with "Onward To Golgotha", the debut album by death metal monsters Incantation and a deliciously citrusy and punchy Pro Tem 4 Pale Ale, the latest from Desert Edge Brewery!

  • Ingredients: Pale, Vienna, and Caramel malts with Simco, Citra, and Mosaic hops
  • Pour: The Pro Tem 4 pours a hazy golden with a creamy and firm, eggshell-white 1+ finger head with great sustain and lots of sticky, intricate spider web lacing.
  • Nose: The nose is citrusy, somewhat dank, earthy, and herbal. There are aromas of grapefruit rind, light pineapple, tangerine, orange peel, a hint of mango, pine resin, herbal tea, and a hint of soft caramel.
  • Taste: Hop-forward, the taste of the Pro Tem 4 follows the nose with intensely bright citrusy, spicy, and earthy flavors.  There are notes of pink grapefruit juice, tangerine, orange pith, black tea, pine, white pepper, and sweet toffee.
  • Mouthfeel: Medium in body and moderately carbonated, the mouthfeel is very crisp, juicy, and bitter with a dry finish and lingering hop bitterness and spiciness.

Overall pairing: The hop-forward bitter and juicy flavors and aromas of the Desert Edge Pro Tem 4 are perfect for the intensity, aggression, and brutalilty of Incantation's brutal "Onward To Golgotha" album!  I specifically paired this beer with Incantation because I had one of these tasty brews at the brewery right before seeing the band live last week!  For an evening of kickass metal and deliciously crisp and punchy flavor, I highly recommend both the brew and the album!
